Don’t you just love carnitas? That tender, tasty pork that breaks with a fork and melts in your mouth? I do! It turns out you don’t have to go to a Mexican restaurant to get a taste. This is my version of the pork carnitas recipe and it couldn’t be simpler. If you decide to use bija or annatto seeds for this dish, see my related post.

Easy slow cooker carnitas recipe - pork roast

Ingredients
- 2 lbs. of pork loin
- 2 1/2 teaspoons ground salt use 1/2 tea-spoon more if sea salt
- 2 teaspoons of oregano or oregano flakes
- 1 teaspoon of parsley flakes
- 1 teaspoon of pepper
- 1 table-spoon olive oil
- Optional: 1 tea spoon of ground bija or annatto seeds
- A slow cooker
Instructions

Add half the salt, oregano, ground annatto powder, parsley and pepper to one side of the pork. Repeat on the other side with the same ingredients.

Place pork in the slow-cooker fat side up and set on low for 6 hours.

Add the olive oil.

After 5 hours, the pork should start browning. Check for tenderness and add time increments of 1/2 an hour of cooking if needed.

Serve with black bean soup, white rice and lettuce/tomato/avocado salad.
