Santo Domingo, Dominican Republic. “Mofongo” is a Dominican dish made of fried, smashed plantains, traditionally mixed with garlic and pork cracklings. Modern variations of mofongo could be mixed with shrimp or made with yucca root or green bananas (guineítos).
